Roasted Potatoes

Ingredients

4 pounds potatoes
8 cloves garlic
4 tablespoons chopped fresh parsley
2 teaspoons dried basil
2 teaspoons dried oregano
ground black pepper to taste
8 - 12 tablespoons light olive or vegetable oil
salt to taste

Directions:

Preheat oven to 350°. Peel potatoes (or leave skins, if you wish), and cut each potato in 2-inch chunks. Mince garlic. In large bowl, combine all ingredients except salt, and toss so potatoes are covered with oil. Spread potatoes in single layer in 9x13-inch (or larger) pan. Bake uncovered for one hour—turning once—or until golden brown and cooked through. Season potatoes with salt before serving.
