Pop’s Pepper Poppers


Serves: 5

Ingredients

hot banana peppers, or your choice
cream cheese
sharp cheddar cheese
bacon or bacon bits

Directions:

Wash and cut stem end off peppers; remove seeds and cut in half lengthwise. Lay on foil-lined pan (for easy cleanup) and stuff with cream cheese or Cheddar cheese (or mixture). Put in 350° oven for 20 minutes. Meanwhile, fry bacon and crumble. Sprinkle on peppers and serve while hot.

Note: Because hot peppers contain oils that can burn your eyes, lips and skin, protect yourself when working with the peppers by covering one or both hands with plastic gloves or plastic bags. Be sure to wash your hands thoroughly before touching your eyes or face.


Fun Fact: De Smet, South Dakota, was the childhood home of author Laura Ingalls Wilder and the setting for her Little House series of pioneer adventure books. The books were adapted into a popular American television series, "Little House on the Prairie," which aired from 1974 to 1983, and is now syndicated worldwide. The Ingalls Homestead, built in 1887, the church (shown here), and the Surveyor’s Shanty, where the Ingalls family spent their first Dakota winter, are open to the public.
