Impossible Garden Pie

Ingredients

2 cups chopped or thinly sliced zucchini
1 cup chopped tomato
1/3 cup chopped onion
1 cup shredded Swiss or Jack cheese
2 cups milk
4 eggs, beaten
1 cup Original Bisquick®
1/3 cup Parmesan cheese
1/4 teaspoon salt
1/8 teaspoon pepper

Directions:

Grease a 10-inch pie plate, or 10x7-inch Pyrex casserole dish. Layer all vegetables in pan. Sprinkle cheese over vegetables. Beat milk, eggs, Bisquick, cheese, and spices. Pour over all and bake at 375° for 35–40 minutes or until a knife inserted comes out clean.

Note: You may also add a layer of cooked ground beef and a few green pepper rings. (Use a slightly deeper casserole dish.) Garnish with zucchini and tomato slices, if desired.
