Bountiful Stuffed Squash

Ingredients

2 (1 1/4-pound) acorn squash
1/2 cup chopped onion
1 tablespoon or more vegetable oil
3/4 cup ground turkey
1 cup finely chopped red cooking apple
1 tablespoon flour
1 tablespoon low sodium, light soy sauce
1/4 cup raisins

Directions:

Cut acorn squash in halves; remove fiber and seeds. Place cut-side-down in microwave dish and cover with plastic wrap. Microwave on HIGH 14 minutes or until tender yet firm. Turn dish once during baking.

Meanwhile, sauté onion in hot oil in large skillet over high heat until translucent. Add turkey and apple; cook and stir over medium heat, about 5 minutes, or until turkey is no longer pink. Sprinkle flour evenly over meat mixture; stir to blend. Gradually stir in light soy sauce; cook and stir until slightly thickened. Stir in raisins. Remove from heat. Fill each squash with the turkey mixture. Microwave on HIGH 1–2 minutes until heated through.
