Spiced Ham And Yams

Serves: 4

   1/4 cup butter
   1 tablespoon flour
   1/2 cup apple jelly
   1/2 cup brown sugar packed
   1/4 teaspoon cinnamon
   1 dash nutmeg
   1/8 teaspoon cloves ground
   1 ham center-cut slice
   1 17-ounce can yams drained
   6 apples rings
   Lettuce


In a 10-inch skillet over medium heat, melt butter or margarine. Add flour to make a roux. Add jelly, brown sugar, cinnamon, nutmeg and cloves; cook and stir until mixture reaches a rolling boil. Add ham and yams. Reduce heat to low, cover and simmer for 15 minutes or until meat and yams are heated through, basting occasionally with sauce. Remove ham and yams and arrange on a platter. Over medium-high heat, cook and stir sauce to reduce to desired consistency. Spoon over ham and yams. Garnish with apple rings.
