Combine all ingredients except shrimp in a large stockpot. Bring to a boil; reduce heat, cover and simmer for 25 minutes. Add shrimp; simmer an additional 5 to 10 minutes.
Tip: Summer's bounty of delicious red and yellow peppers can be saved for winter enjoyment. Fill ice cube trays with diced peppers and water, then freeze. Toss frozen cubes right into simmering dishes for a burst of flavor and color.
