Arrange pork chops in a lightly greased 13"x9" baking pan; set aside. Combine soup, sour cream, minced onion, salt and pepper; spread on chops. Top with French fried onions. Cover and bake at 325 degrees for 2 hours, or until chops are tender. Arrange sliced potatoes over chops; reduce heat to 300 degrees and bake an additional 45 minutes, until potatoes are warmed through.
Tip: Pork chops, chicken breasts and cubed stew beef brown better if patted dry first with a paper towel.
