Egg & Bacon Hash

Skillet breakfasts get me every time! There is something just so fresh, hot, and appetizing about them. I love ordering meals in skillets when out for brunch, so why not bring that home, into my everyday life?! This is the perfect skillet meal to begin with! Bacon, egg, cheese, potatoes… you can eat this for breakfast, lunch or dinner!


It takes about 30 minutes to make, but if you’re anything like me, you won’t end up with a full batch because you’ll sneak those browning potatoes and crispy bacon throughout the cooking process!

To begin, dice your potatoes into small, bite-sized cubes. Then, heat your oil in a large cast iron skillet and get those potatoes browning. Be sure to stir throughout so they don’t stick. I wanted to hurry up this part of the process, so I ended up covering the pan with a lid and checking on them every few minutes. This way, it took about 15 minutes to get the potatoes soft to the touch.

Next, add the bacon to the pan and fry it until crisp. I have tried pre-cooking my bacon in the microwave, so if you choose to do it this way just be sure to add the bacon grease back into your skillet with the bacon! Once the bacon and potatoes are cooked, add the green onions and season generously with salt and pepper!


The last step is to add your eggs to the skillet. One pot meals—they’re the best! Push the potatoes and bacon aside to create 4 wells (or less if your skillet is smaller) and crack your eggs into those wells. Top the rest of the hash with mozzarella cheese at this stage, while the eggs cook. Once the eggs are done to your liking, plate them and enjoy!!
