Sundance Chicken Hash

Ingredients

2 tablespoons clarified butter or vegetable oil
3 cups peeled, cubed potatoes (1/2 inch)
3/4 cup red onion pieces (1/2 inch)
3/4 cup peeled, roasted red bell pepper pieces (1/2 inch)
1 cup shredded roasted chicken
1/4 cup minced scallion
1 tablespoon chopped parsley
1 salt and pepper to taste
6 large eggs, cooked as you like

Directions:

Heat a large nonstick sauté pan over high heat. Add clarified butter and potatoes. Cook until well browned, tossing occasionally. Reduce heat to medium and add onion. Sauté for 3–4 minutes or until tender. Add bell pepper and chicken and cook until heated through. Add scallions, parsley, salt and pepper. Mound onto 6 serving plates. Top each serving with an egg.


Fun Fact: Sundance Resort is a ski resort located 13 miles northeast of Provo, Utah, on Mount Timpanogos in Utah's Wasatch Range. Skiing began on the site in 1944. Actor Robert Redford acquired the area in 1969, and established a year-round resort that would later spawn an independent film festival and a nonprofit institute of the same name. The resort is named after the role he played in the 1969 film, Butch Cassidy and the Sundance Kid. (The resort of Sundance is not to be confused with the town of Sundance, Wyoming, the location from where the Sundance Kid received his name.) The Sundance Film Festival, held 30 miles north in Park City, is a competition for independent film makers that has become extremely popular in the film industry and media. It is the largest independent film festival in the United States, and also one of the largest in the world.
