Popovers


Serves: 12

Ingredients

1 cup flour, sifted
1/4 teaspoon salt
1 teaspoon sugar
1 tablespoon oil
1 cup skim milk
2 eggs

Directions:

Preheat oven to 400°. In a small bowl, mix flour with salt and sugar. Combine oil, milk, and eggs in blender; process until very smooth. Add to the blender the flour mixture. Process at high speed for about 1 minute. Fill greased muffin pans half full with the batter. Bake for about 40 minutes or until brown. Keep oven door closed while baking to prevent popovers from collapsing. Serve immediately.
