Tuscan Chicken Simmer

This Tuscan Chicken Simmer is easy, fast and delicious. I like to make the basil pesto sauce instead of using Classico brand. See the recipe included in this menu plan.

Ingredients:

4 small boneless skinless chicken breasts (1 lb.)
1/4 cup classico traditional basil pesto sauce and spread (or homemade)
4 ounces (1/2 of 8-oz. pkg.) philadelphia cream cheese, cubed
1/4 cup water
2 cups grape tomatoes
1/2 cup shredded mozzarella cheese
1/4 cup shredded Parmesan cheese
1/4 cup shredded provolone cheese

Directions:

Cook chicken in large nonstick skillet on medium heat 6 to 7 min. on each side or until done (165ºF). Remove chicken from skillet; cover to keep warm.

If making homemade Basil Pesto Sauce, prepare it first, then add it (or the jarred sauce) with the next 3 ingredients to skillet. Cook, uncovered, on medium heat 2 min. or until heated through, stirring occasionally.

Return chicken to skillet; spoon sauce over chicken. Cook 1 min. or until chicken is heated through. Toss cheeses together. Sprinkle with shredded cheese.
