When preparing the onion pieces, chop up 3 extra onions (about 2 ½ cups). Double bag them and store in the fridge. You will use these in the Tomato Basil Soup for Meal 3, and the Christmas Eve Meat Pie for Meal 4.

Save 2 cups of the leftover pot roast to make sandwiches for Meal 3. Plan accordingly to add extra meat to cook for today so you have leftovers.

If you have leftover carrots, potatoes, onion and celery from the Pot Roast meal, drain and save them to puree in the Tomato Basil Soup to give it more body and flavor.

Use the 2 cups of pot roast leftover from Meal 2 to make today’s sandwiches.

Pull out the onions you cut up for Meal 2. Use ½ cup when preparing the Tomato Basil Soup.

When pureeing the Tomato Basil Soup, add any leftover carrots, onions, potatoes, and celery to give it more body and extra flavor.

Prepare the Jalapeno Pepper Wontons with the remaining wrappers from Meal 1.
