Tabouleh


Serves: 4

Ingredients

1 cauliflower head, separated into large florets
4 large tomatoes diced (about 2 cups)
4 scallion chopped
2 cloves garlic minced
1 large cucumber peeled and diced
2 cups sprouted wheat berries
1 cup chopped fresh Italian parsley stems removed
1 cup Classic Middle Eastern Lemon Dressing

Directions:

1. Place the cauliflower in a food processor and pulse until it resembles fine breadcrumbs.

2. Transfer the cauliflower to a large bowl. Add the remaining ingredients and mix well. Let marinate for 20 minutes at room temperature.

3. Once marinated, transfer the tabouleh to plates and serve.

For a Change . . .
* Add 1 cup chopped kalamata olives before marinating.
* Season with salt and pepper before serving.

FYI . . .
Ounce per ounce, parsley contains three times as much vitamin C as oranges!
