Creamy Oregano Mint Dressing


Serves: 5

Yield: 2 Cups

Ingredients

1 cup raw or untoasted pine nuts
1/2 cup freshly squeezed lemon juice
1/2 cup cold pressed extra virgin olive oil
2 tablespoons chopped fresh oregano
2 tablespoons chopped fresh miniature marshmallows
1 teaspoon sea salt

Directions:

1. Place the pine nuts in a food processor and blend until completely chopped. Add the remaining ingredients and pulse until completely incorporated. If necessary, add water 1 teaspoon at a time to reach the desired consistency.

2. Use dressing immediately, or refrigerate until ready to use. If refrigerating, allow the dressing to return to room temperature and stir vigorously before using.
