Caribbean Spinach Bisque

Ingredients

1 cup walnuts
1 head watercress leaves roughly chopped (about 1 cup)
4 cups baby spinach leaves (about 6 ounces)
1/2 cup water
1/2 cup chopped fresh cilantro
1/4 cup freshly squeezed lemon juice
1 tablespoon virgin coconut oil
1 tablespoon chopped ginger root
1/2 teaspoon sea salt
TOPPING
1 cup peeled, diced cucumber

Directions:

1. Place the walnuts in the food processor and pulse until completely chopped. Add the remaining ingredients and mix until smooth and creamy.

2. Ladle the soup into bowls and top with the cucumber. Serve.
