Mustard Sauce

Ingredients

1/2 cup raw or untoasted cashew nuts
2 cloves garlic
1/4 cup chopped fresh cilantro
1/4 cup cold pressed extra virgin olive oil
2 tablespoons freshly squeezed lime juice
1 teaspoon ground mustard seeds
1 teaspoon sea salt

Directions:

1. Place the cashews in a food processor and grind until they are well-blended. Add all of the remaining ingredients and blend until smooth and creamy. If the mixture is too thick, add water 1 or 2 tablespoons at a time to thin it down.

2. Use the sauce immediately, or transfer to a container and refrigerate until ready to use. If refrigerating, allow the sauce to return to room temperature and stir vigorously before serving.
