Caribbean Lime Dressing

Yield: 1 1/2 Cups

Ingredients

1 cup fresh pineapple chunk
1/4 cup raw or untoasted sesame oil
2 tablespoons chopped shallots
2 tablespoons freshly squeezed lime juice
2 tablespoons chopped fresh Italian parsley
1 teaspoon sea salt
1/2 teaspoon red pepper flake

Directions:

1. Place all of the ingredients in a food processor and blend until smooth. If necessary, add water 1 to 2 tablespoons at a time until the desired consistency is reached.

2. Use immediately, or transfer to a container and refrigerate until ready to use. If refrigerating, allow the dressing to return to room temperature and stir vigorously before serving.
