Cole Slaw

Ingredients

1 package shredded traditional coleslaw mix (Dole, Hains, etc)
1/2 cup shredded or grated carrot
1 McIntosh apple peeled, cored, and cut into 1/4 inch pieces
1/2 cup raisins
1 tablespoon enriched rice milk
3 tablespoons white vinegar
2 tablespoons orange juice
1 teaspoon honey
1 tablespoon lemon juice
6 tablespoons olive oil

Directions:

In a large bowl, combine the slaw mix, carrot, apple, and raisins. In a small bowl, combine the rice milk, vinegar, orange juice, honey, and lemon juice. Slowly whisk in the olive oil a little at a time. Pour dressing over cole slaw and combine thoroughly. Cover bowl and let chill 1 hour before serving.
