Vegetable Beef Soup

Ingredients

2 cups left over roast beef or beef stew meat
1 package beef stew seasoning mix
1 quart tomato
6 cups water
2 teaspoons beef bouillon
4 potatoes
4 carrots
1 cup chopped celery
1 (15 1/4-ounce) can corn, drained
1 chopped onion
1 (15 1/4-ounce) can green beans, drained
1 zucchini
1 teaspoon salt
1/2 teaspoon pepper

Directions:

Cut roast in pieces or brown beef stew meat in small amount of oil. Mix together beef stew seasoning mix, tomatoes, water, bouillon and meat. Bring to boil. Lower heat, cover and simmer for 1 hour. Peel and cube potatoes and carrots. Wash and cube zucchini. Add rest of ingredients and simmer for 30 minutes.

For crock-pot, brown beef and add with rest of ingredients to crock-pot. Cook on low for 7 to 8 hours.
