Baked Potato Soup

Ingredients

4 baked potatoes
6 tablespoons butter
1/2 cup chopped onion
1 cup chopped celery
6 tablespoons flour
5 cups milk
1 tablespoon parsley
1 teaspoon salt
1/4 teaspoon pepper
5 strips bacon, cooked and crumbled
1 cup Cheddar cheese, , shredded

Directions:

Peel and cube potatoes. Melt butter in large saucepan. Add onion and celery and cook until tender. With wire whisk, stir in flour, salt and pepper. Gradually add milk, stirring constantly until thickened and boiling. Stir in potatoes and bacon. Heat through. Spoon into bowls and sprinkle with cheese.
