Bran Muffins

Ingredients

1 1/2 cups all-bran
1 1/2 cups water
1 tablespoon cornstarch
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 tablespoon white vinegar
1/3 cup molasses
1 1/4 cups flour

Directions:

Soak the bran in the water for 5 minutes. Add the cornstarch & the molasses. Beat in the baking powder, baking soda & vinegar. Add the flour, mix well. The dough should be thick, but not dry. Add more flour or water if needed.

Spoon into an oiled muffin tin. Bake at 400F for 20 minutes.
