Place the butter and chocolate in a heavy large saucepan over low heat. Cover and cook, stirring occasionally, until the chocolate has melted. Using a wire whisk, slowly add the sugar and salt and blend well. Gradually add the evaporated milk and water, stirring until smooth. Cook for 25 to 30 minutes, or until the hot fudge sauce thickens slightly. (The sauce will thicken more as it cools.) Remove the saucepan from the heat and allow the sauce to come to room temperature. When Sugar’s Hot Fudge Sauce is cool, transfer it to a covered container and refrigerate for up to 4 weeks. (After the sauce has been refrigerated, it may be necessary to return it to its original consistency by heating it in the microwave for a minute or two.)
