Orange Almond Joy


Serves: 2

Ingredients

1/2 cup almonds soaked in enough water to cover for 2 days
1 cup fresh orange juice
1 cup fresh coconut milk (or canned if fresh is not available)
1 teaspoon vanilla extract
1/4 cup young coconut meat (optional)

Directions:

Blend all ingredients together well and serve. Garnish with an orange twist. Enjoy!

VARIATIONS
For a stronger orange flavor, substitute frozen orange juice concentrate for the fresh orange juice.
Substitute rice or soymilk for the coconut milk.
