Red Cabbage

Ingredients

1 (3-pound) red cabbage
2 green apples, peeled and chopped (preferably Granny Smith variety)
1 onion, finely chopped
1/4 cup sugar
1/4 cup vinegar (cider or white)
2 tablespoons bacon drippings
1 teaspoon salt
freshly ground black pepper
1/2 teaspoon ground allspice

Directions:

Shred cabbage. Put in saucepan with apples, onion, allspice, sugar, vinegar, bacon fat, salt, and pepper and 1/4 cup boiling water. Bring to boil, reduce heat. Cover and simmer for 1 hour, stirring occasionally.

Author’s note: Keep in crock for 2 or 3 days, covered tightly in refrigerator, then serve.
