Pepper Steak: White House

Ingredients

3 pounds beef tenderloin steaks, sliced
3 green peppers, sliced (preferably julienne style)
3 onions, sliced
9 large mushrooms, sliced (preferably portabellos)
3 fresh tomatoes, quartered
1 1/2 cups Espanol sauces
3/4 cup butter
1/2 cup flour
6 tablespoons red Burgundy
salt and black pepper to taste

Directions:

First make green pepper sauce by sautéing the green peppers, onions, mushrooms, and tomatoes in 1/2 cup butter for 5 minutes. Add the Espanol sauce and simmer for 10 minutes. Salt and pepper the sliced steak. Dip in the flour and sauté in the remaining 1/4 cup butter for 2 minutes. Add the sauce and simmer for 15 minutes, stirring frequently. Add the wine and simmer for 3 minutes.
