Potato Rolls

Ingredients

2 large potatoes, boiled and mashed (approximately 1 cup)
2 envelopes granular yeast
1 cup milk
2/3 cup butter
1/2 cup sugar
5 1/2 cups sifted flour
2 eggs, beaten
1 1/2 teaspoons salt

Directions:

Dissolve the yeast in 1/2 cup lukewarm water. Scald milk and add butter, sugar, and salt. Stir until sugar is dissolved. Add mashed potatoes and mix well. Cool the mixture until it is lukewarm. Add the yeast and half of the flour. Mix well. Beat in the eggs. Add remaining flour and mix thoroughly. Knead the dough on lightly floured board for 10 minutes or until smooth and elastic. Place in greased bowl turning once to bring the greased side up. Cover with damp cloth. Let rise in warm place, about 80–85°F for an hour, or until dough is doubled in bulk. Punch dough down. Form into 36 rolls. Place in greased muffin pans, and let rise in warm place for 30 minutes. Brush the rolls with melted butter. Bake in moderate oven (375°F) for 20 minutes.
