Black Beans in Garlic Sauce

Ingredients

2 cups dried black beans
2 ounces salt pork, diced
2 cloves garlic, sliced
1 teaspoon cumin seed
1 teaspoon salt

Directions:

Soak the beans overnight in water and keep covered. Simmer them in the morning in the soaking water for 2 hours with salt. Drain beans and keep hot. Sauté diced pork for 5 minutes. Add garlic and sauté for 5 more minutes or until pork dices are crisp and garlic slices are golden brown. Stir in cumin seeds and the beans.

Author’s note: 4 cups canned lima beans, heated and drained, may be used instead of 2 cups dried beans, soaked and cooked.
