Herbed Green Salad

Serves: 5


Romaine lettuce
Belgian endive
freshly chopped parsley
freshly chopped tarragon
freshly chopped chervil
freshly chopped dill
champagne salad dressing (or any other light dressing)


Arrange the romaine, chicory and endive in a salad bowl. Sprinkle generously with the chopped herbs.

To serve, toss well with champagne or classic French dressing. Fresh basil, watercress, chives, or rosemary may be added to the salad or substituted for the other herbs.
