Enchiladas de Huevos

Ingredients

8 hard-cooked eggs, chopped
1 1/2 cups shredded Cheddar or Monterey Jack cheese, divided
1 cup picante sauce, divided
1/4 cup sour cream
1/3 cup chopped bell pepper
1/3 cup sliced green onions and tops
3/4 teaspoon cumin
1/2 teaspoon salt
8 (6- to 8-inch) flour tortillas
avocado slices and sour cream

Directions:

Combine eggs, 1/2 cup cheese, 1/4 cup picante sauce, sour cream, bell pepper, green onion, cumin and salt; mix well. Spoon about 1/3 cup of mixture in center of tortillas. Place seam side down in 11x7-inch dish. Spoon remaining picante sauce evenly over casserole. Cover dish tightly with aluminum foil. Bake in a preheated 350° oven for 15 minutes. Uncover. Sprinkle with remaining cheese. Continue baking uncovered about 10 minutes until hot, and cheese is melted. Garnish with avocado and sour cream. Serve with additional picante sauce.
