Chiles Rellenos

1 1/2 teaspoons butter
1 (4-ounce) can whole green chili, drained, split, and seeded
1/2 pound Tillamook or Monterey Jack cheese, sliced
5 eggs
1/4 teaspoon salt


Melt butter in a 9x9-inch baking pan. Place chiles in pan and cover with cheese slices, leaving about 1/2 inch between slices. Beat eggs with salt and pour over cheese. Bake in preheated 325° oven until cheese is melted and eggs have set, about 25 minutes. Remove from oven. Let sit for 20 minutes, then cut into squares.

Weighing 700 tons, it sits atop the 2,300-foot peak of Corcovado mountain. It is visible night and day from most of the city’s neighborhoods. In 2007, Christ the Redeemer was named one of the New Seven Wonders of the World.
