Walla Walla Steak Sandwich with Horseradish Sauce

Ingredients

2 pounds beef flank steaks

Marinade:
3/4 cup beer
1/4 cup olive oil
1 teaspoon salt
1/2 teaspoon black pepper
2 cloves garlic, minced
1/4 teaspoon crushed red pepper
------------------------------
Onions:
3 tablespoons butter
3/4 teaspoon paprika
6 cups Walla Walla sweet onions, sliced into 1/4-inch rings

Horseradish Sauce:
1 cup sour cream
2 tablespoons horseradish
1 tablespoon parsley
1/4 teaspoon salt
1/8 teaspoon paprika
------------------------------
Rolls:
1/4 cup butter, softened
1 tablespoon Italian herb seasoning
6 French bread rolls, split

Directions:

Marinade:
Trim steak of fat and score both sides. Place in a covered container or Ziploc bag. Combine Marinade ingredients and add to steak. Refrigerate for 4–24 hours, turning occasionally.

Onions:
Melt butter in large skillet over medium-low heat. Add paprika and onions and sauté until onions are tender, 20–25 minutes. Keep warm until ready to serve.

Horseradish Sauce:
Combine sauce ingredients in a small saucepan and cook over low heat until thoroughly heated, about 7 minutes. Keep warm until ready to serve.

Remove steak from Marinade and grill or broil about 5 minutes per side or until steak reaches desired degree of doneness. Slice steak thinly on the diagonal and keep warm until ready to serve.

Rolls:
Combine butter and Italian seasoning and spread on rolls. Toast rolls briefly under broiler. To serve, place steak on rolls, then top with Onions and Horseradish Sauce.

Note: If you can’t find Walla Walla sweets, substitute Vidalia or Maui onions. Be sure to sauté them slowly over low heat to bring out their natural sweetness.
