Barbecued Short Ribs

Ingredients

5 pounds meaty beef short ribs, cut in 2-inch pieces
salt and pepper to taste
flour
2 medium onions, sliced
2 teaspoons vinegar
2 tablespoons Worcestershire sauce
1 tablespoon salt
1 teaspoon paprika
1 teaspoon chili powder
3/4 cup tomato catsup
1/2 teaspoon cayenne pepper
1/2 teaspoon black pepper (optional)
3/4 cup water

Directions:

Sprinkle short ribs with salt and pepper to taste; dredge in flour. Place in a roaster and cover with onions. Combine remaining ingredients; mix well and pour over short ribs. Cover and bake at 350° for 3 hours, basting occasionally, and turning meat over once or twice during baking. Remove cover during last 15 minutes of baking.

Note: This can be cooked a day or two ahead and refrigerated. Remove and discard solidified grease before reheating to serve.
