Chicken Bundles

Ingredients

3/4 cup chopped green onions
3/4 cup mayonnaise
3 tablespoons lemon juice
3 cloves garlic, minced, divided
3/4 teaspoon dry tarragon
2/3 cup margarine, melted
12 sheets phyllo
6 boneless, skinless chicken breast halves
salt and pepper to taste
2 tablespoons grated Parmesan cheese

Directions:

Mix together onions, mayonnaise, lemon juice, 2 cloves garlic, and tarragon. Set aside. Combine remaining garlic and butter. For each bundle, place 2 sheets of phyllo on a board and brush with garlic butter. Spread one side of chicken breast with about 1 1/2 tablespoons of mayonnaise mixture. Turn over onto corner of phyllo sheets and top with 1 1/2 tablespoons more of mixture.

Wrap breast in phyllo as follows: Flip corner of phyllo over chicken. Roll once. Fold side over top and roll again. Fold opposite over, then roll up. Folds like an envelope. Place bundles slightly apart on an ungreased baking sheet. Brush with remaining garlic butter. Sprinkle with cheese. Bake at 375° for 20–25 minutes or until golden.

Note: May be frozen—but thaw completely, covered, before baking.


Fun Fact: Founded in 1776 by Franciscan Padres, Mission San Juan Capistrano in Orange County, California, is best known for its swallows, which return every year to their nests in the old stone church, the largest and most ornate of any of the missions. The church shattered and collapsed in a tremendous earthquake in 1812 and much of the mission is in ruins, but efforts are underway for restoration.
