Silver State Potatoes

Ingredients

2 cups sour cream
1 tablespoon salt
1/4 cup milk
1/4 cup butter
1 (10 3/4-ounce) can cream of chicken soup
1/2 cup chopped onion
1/2 cup grated Cheddar cheese
4 medium potatoes, boiled, peeled, and grated, or hash browns
1 cup crushed cornflakes
2 tablespoons melted butter

Directions:

Combine sour cream, salt, milk, butter, soup, onion, and cheese and simmer on low heat until cheese melts. Then add potatoes. Put in 9x13-inch baking dish that has been sprayed with non-stick spray. Combine crushed cornflakes with melted butter and sprinkle on top. Bake in 350° oven for 35 - 45 minutes.


Fun Fact: The Comstock Lode was the first major U.S. discovery of silver ore, located under what is now Virginia City, Nevada. After the discovery was made public in 1859, prospectors rushed to the area and scram-bled to stake their claims. The excavations were carried to depths of more than 3,200 feet. Since that time, the Comstock Lode has yielded more than $400 million in gold and silver and remains the richest known silver deposit ever discovered in the United States. The mines declined after 1874.
