Prairie Schooners

Ingredients

4 large baked potatoes
1 (15-ounce) can Ranch Style beans
1 cup sour cream
1 stick butter, softened
1 salt, pepper, and chili powder to taste
2 tablespoons chopped green peppers
2 tablespoons chopped onions
1 tablespoon butter or margarine
1 cup grated Cheddar cheese

Directions:

Slice off top 1/3 of baked potato lengthwise. Scoop out potato leaving 1/4 inch around potato skin. Mash potato until free of lumps. Drain beans thoroughly, reserving juice. Mash beans. Whip sour cream, butter, mashed beans, salt, pepper, and chili powder. Add to mashed potatoes, adding enough bean juice to moisten. Spoon mixture into potato shells.

Sauté green pepper and onion in margarine. Top each potato with grated cheese, onion, and green pepper. Bake at 425° about 10 minutes or until browned.
