Mediterranean Grilled Veggies

1 (8-ounce) package fresh mushrooms
1 medium onion, cut into wedges
2 small bell peppers (1 red, 1 green), cut into chunks
2 cups cherry tomatoes
6 tablespoons extra virgin olive oil
2 tablespoons balsamic vinegar
1 tablespoon soy sauce
2 garlic cloves, crushed
1/4 cup chopped fresh basil


Prepare all the vegetables. Whisk together Marinade ingredients. In a large bowl, toss vegetables in Marinade and marinate for 1 hour. Put veggies, except tomatoes, in a grilling basket or on skewers. Grill, brushing with Marinade and turning several times, for 15 minutes. Add tomatoes and grill 5 minutes longer, or until veggies are as tender as desired.
