French Country Style Chicken

Ingredients

4 (6-ounce) boneless, skinless chicken breasts
1 salt and black pepper to taste
1 cup Granny Smith apple, unpeeled, cored and sliced
6 scallion, diced
2/3 cup apple cider
1 cube chicken bouillon
1 teaspoon dried sage
1/2 teaspoon dried ginger
2/3 cup 2% milk
2 teaspoons flour
2 teaspoons splenda
1 parsley as garnish

Directions:

Spray skillet with nonfat cooking spray. Sauté chicken breasts until browned, about 5 minutes per side. Season to taste with salt and black pepper. Add apples, scallions, apple cider, bouillon, sage, and ginger. Heat to a boil. Reduce heat and simmer, covered, until chicken is tender, 10–12 minutes. Remove chicken and apples to serving platter.

Simmer remaining cider mixture until reduced. Stir in milk, flour, and sugar substitute into skillet. Heat to a boil, stirring constantly, until thickened, about 1 minute. Season to taste with salt and pepper. Pour sauce over chicken and apples. Garnish with parsley and serve hot.
