Roasted Duck, Nevada Style

Yield: Serves 1 -2 per duck

Ingredients

6 slices French bread, crumbled
1/2 cup diced yellow onion
5 cloves garlic, sliced
4 tablespoons butter
4 tablespoons chopped cilantro
2 tablespoons diced jalapeño peppers
4 tablespoons chopped pine nuts
1 duck
1 cup chicken broth
1 cup red wine

Directions:

Preheat oven to 325°. Combine bread, onion, garlic, butter, cilantro, jalapeño, and pine nuts. Stuff duck(s) with mixture. Rub duck(s) with additional butter. Put in roasting pan; add broth and wine. Bake 4 hours at 325°.

For gravy, add pan juices to a little flour and butter; stir until thick.
