Sweet and Sour Cabbage Soup

Ingredients

6 cups shredded and diced cabbage
1 onion, coarsely chopped
5 cups beef broth
5 cups chicken broth
2 - 3 cups cooked chopped meat (sausage, ham, beef, pork roast, pot roast)
1 teaspoon minced garlic
1/4 teaspoon dried thyme
1/4 teaspoon ground allspice
1/2 teaspoon ground cayenne pepper, or to taste
salt and pepper to taste
2 cups chopped tomatoes
1/4 cup tomato paste
1/4 cup brown sugar
1/4 cup cider vinegar
1/8 cup lemon juice

Directions:

Simmer cabbage and onion in broth until tender, about 1/2 hour. Add meat, spices, tomatoes, and tomato paste, and simmer until reduced slightly and the flavors are blended. Add brown sugar, vinegar, and lemon juice, and reheat.

This soup improves with 24 hours chilling and reheating. Makes a lot of hearty soup, but it freezes well.
