French Vegetable Beef Soup

Ingredients

2 pounds beef stew meat, cut in 1/2-inch cubes
1/4 cup oil
1 (10 3/4-ounce) can condensed onion soup
6 cans water
1 (6-ounce) can tomato paste
1 1/2 teaspoons salt
1/4 teaspoon pepper
1 tablespoon basil
1 (16-ounce) can wax beans, drained
1 (16-ounce) can kidney beans, drained
8 carrots, sliced
2 cups sliced celery
1/2 cup Parmesan cheese

Directions:

Brown meat in oil. Reduce heat and stir in soup and water. Add tomato paste, salt, pepper, and basil. Simmer covered, 1 1/2 hours.

Add all vegetables. Reheat to boiling, then simmer covered 30 minutes, or until meat and vegetables are tender. Stir in cheese.
