	Chorizo Con Papas

Serves: 6

Print this Recipe

   1/2 pound sausages
   1/4 cup vegetable oil
   1 potato, peeled and cubed
   1 cup chopped onions
   1 cup chopped green peppers
   1 chopped jalapeño pepper
   1 1/2 cups chopped tomatoes
   7 eggs
   1/3 cup milk

Brown sausage in skillet until no longer pink. Remove from pan and sauté vegetables in oil until tender. Beat eggs and milk and pour over vegetables. Add sausage and cook until done. Serve with tortillas and salsa.
