Fruited Dulce De Leche

Dulce de leche is caramelized sweetened milk that is used as flavoring or as a sauce. This recipe is of the sauce variety. It is almost effortless to make at home: just heat an opened can of condensed milk in the oven until it browns. This one is flavored with fruit juice, which cuts the sweetness and gives it an added flavor dimension. It is wonderful to pour over a plain cake, such as the Meyer Lemon Poppy Seed Cake.


   1 (14-ounce) can sweetened condensed milk, regular, low-fat, or fat free
   2/3 cup tart cranberry juice, pomegranate juice, or citrus juice


Heat the oven to 425°F.

Pour the condensed milk into a pie pan and cover with foil, crimping any overlap tightly around the edges of the pan, and place in a larger pan of water. Bake until the milk turns a golden brown, about 1 hour. Remove the pie pan from its water bath and mix the milk with a whisk until smooth. Add the juice and stir until fully incorporated. Serve warm or at room temperature. Store in the refrigerator for up to 1 week.
