Cannoli Ice Cream Sandwiches |

Because ricotta cheese is naturally creamy and thick, it can be turned into an ice cream just by sweetening it and smoothing its grainy texture in a food processor. The result is something like frozen cannoli filling. To enhance the cannoli association, the ricotta ice cream is loaded up with chocolate chips and almonds and sandwiched between cookies.
1 (15-ounce) container ricotta cheese
1/3 cup honey
3/4 teaspoon vanilla extract
1/2 cup sliced almonds (about 2 ounces)
1 cup morsels semi-sweet chocolate chips (about 6 ounces)
12 cinnamon graham crackers broken in half

Combine the ricotta, honey, and vanilla, and pour into a shallow container. Freeze until solid, about 4 hours or longer, cut into cubes, and puree in a food processor until creamy. Mix in the almonds and the chocolate morsels and make sandwiches by layering 2 tablespoons of the ice cream mixture between 2 graham cracker squares. Freeze until ready to serve.
