Combine vegetables, soup, 1/2 cup cheese, sour cream, pepper and 1/2 can onions. Pour into 1-quart casserole. Bake covered at 350° for 40 minutes. Top with remaining cheese and onions. Bake uncovered for 5 more minutes.
Even Easier: After mixing ingredients, cook in microwave 10 minutes on BAKE (#7 power). Stir, then bake in regular oven as directed to melt cheese and crisp onions.
