Cousin Patty’s Carrot Soufflé

Ingredients

3/4 cup sugar
3 tablespoons flour
1/4 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon baking powder
1 stick (1/4 pound) butter, softened
1 teaspoon vanilla extract
2 tablespoons rum (optional)
1 (16-ounce) can carrot, drained
3 eggs

Directions:

Preheat oven to 350°. Whisk together sugar, flour, salt, pepper, and baking powder. Combine all ingredients in blender and blend thoroughly. Pour into greased casserole dish and bake for 45 minutes. Serve hot. Serves 4–6 hungry hogs!
