In medium saucepan, combine 1/3 cup beet liquid and raisins. Cover; simmer until raisins are plumped, about 5 minutes. Combine sugar and cornstarch; stir into raisins. Add lemon juice and butter. Cook and stir over medium heat until slightly thickened. Stir in beets and simmer until mixture is heated through, about 5 minutes. If desired, garnish with a twist of lemon.
Editor's Extra: For variation, deluxe these yummy beets with a small can of crushed pineapple, drained.
