Beat eggs with sugar in medium bowl. Mix flour and cornmeal; stir into egg mixture. Mix rest of ingredients into the above. Pour into pie shell. Bake at 375° for about 40 minutes. Cool before slicing. Refrigerate leftovers—if any. Pie can be frozen.
Even Easier: There’s nothing like fresh lemons, but bottled lemon juice and zest will certainly work. “My Father,” however, probably wouldn’t approve.
