Pear-Raspberry Cobbler

Ingredients

2 1/2 pounds firm pears, sliced (5 or 6)
1/2 cup sugar or Sugar Twin
2 1/2 tablespoons flour
1/8 teaspoon cinnamon
1/8 teaspoon nutmeg
1 tablespoon lemon juice
1 cup raspberries, fresh or frozen

Topping:
3/4 cup flour
1 tablespoon plus 1 teaspoon sugar or Sugar Twin
3/4 teaspoon baking powder
1/4 teaspoon soda
1/4 teaspoon salt
3 tablespoons cold butter
1/4 cup nonfat buttermilk

Directions:

Preheat oven to 350°. Peel, halve, core, and slice pears. Combine sugar, flour, spices, and sliced pears. Add lemon juice and raspberries. Mix and spoon into 2-quart dish.

Topping:
Combine flour, 1 tablespoon sugar, baking powder, soda, and salt. Cut butter into small pieces and blend with pastry cutter into flour mixture until coarse meal texture; then add buttermilk. Stir, roll between 2 pieces waxed paper sprayed with Pam. Peel off waxed paper and place over fruit and sprinkle with remaining teaspoon sugar. Bake for 35-45 minutes, till lightly browned.
