Pineapple Pie

Ingredients

1 (9-inch) pie shell, unbaked
4 eggs (separate one)
1 stick butter
1 1/2 cups sugar
2 tablespoons flour
1 small can crushed pineapple, well drained

Directions:

Prepare pie shell and brush with a small amount of slightly beaten egg white. Set aside. Cream butter and sugar; add eggs, 1 at a time, beating well after each addition. Stir in flour. Add pineapple and mix until all ingredients are well blended. Pour mixture into pie shell and bake at 350° 30-40 minutes. Shake pan gently every few minutes during the last several minutes of baking time. The center should just be beginning to seem firm, but should still move. Remove from oven and set on a solid surface for pie to continue to set.
