Key Lime Pie

Ingredients

1 can sweetened condensed milk
3 egg yolk
1/2 cup fresh key lime juice
1 baked pie shell
3 egg whites
1/4 teaspoon cream of tartar
5 tablespoons superfine sugar
1/2 teaspoon vanilla extract

Directions:

Beat first three ingredients together until thick and smooth. Pour mixture into pie shell. Make meringue (beat egg whites with cream of tartar; gradually add sugar and beat till stiff; add vanilla) and spread over pie filling. Bake at 400° 8-10 minutes to brown, then chill before serving.

Note: A key lime pie that is green is not a key lime pie. The Florida Cracker purist insists on the yellow pie made from true key limes. The trick is to squeeze them while they’re in season, freeze the juice in ice cube trays, store them in freezer bags, and you’ll have Key Lime Pie all year round.
